This recipe is Asian, so don’t be surprised you will be using Fish Sauce, Thai curry paste, and Chili Garlic sauce. You can get everything in the Asian section of your local grocery store.

Ingredients

Beef Satay and Marinade

  • 1 pound skirt steak or flank steak
  • 2 tablespoons Soy sauce or coconut aminios
  • 2 tablespoons Fish sauce
  • 1/2 tablespoon coriander/cilantro (ground)
  • 2 tablespoons powdered Sukrin Gold (coconut sugar or honey, swerve confection)

Thai Peanut sauce

  • Powdered Sukrin Gold (coconut sugar or honey, swerve confection) – 1 tablespoon
  • Thai Red curry paste – 1/2 teaspoon
  • Full-fat coconut milk (canned) – 1/3 cup
  • Smooth almond butter or peanut butter – 1/4 cup
  • Chili garlic sauce – 1-2 teaspoons

Additional Information

  • Before grilling, you can add 1 teaspoon of olive oil to the meat.
  • Get bamboo skewers which you have soaked for many hours in water.
  • Get foils to protect the bamboo skewers from getting burnt.

Method of Preparation

Beef Satay

Cut the skirt steak or flank steak into 1 1/2 inch strips such that the grain of the meat lies horizontally across the strip. Stick the skewers into the steak but leave a handle that you can use to hold the meat when eating. Pour the sweetener (Sukrin Gold), fish sauce, and soy sauce into a baking dish, and apply the mixture over every part of the meat. Sprinkle the coriander on the beef, rub it in thoroughly. Allow marinating for 15 to 20 minutes. While the meat is marinating, preheat the grill, shake your coconut milk can, and start preparing the peanut sauce.

Thai Peanut Sauce

Pour the peanut butter or almond butter in a small microwave bowl and allow to warm for a few seconds in the microwave. Pour your preferred sweetener, Chili garlic sauce, and Thai red curry paste and stir into the peanut butter. While stirring the mixture with a whisk, add the coconut milk slowly to the peanut butter mixture.

Grill

Apply about one tablespoon of olive oil or any other oil you desire on the meat and let it cover the whole surface. Get a fold of foil that will be placed under the skewers when you start grilling the meat. Retrieve the beef from the marinade and place it on the grill to cook. Arrange them on the grill with the foil placed under the skewers to prevent burning. Depending on the thickness of your meat and hotness of your grill, you may need to grill one or both sides to cook the meat.

Serve

The beef satay can be paired with Thai cucumber salad, Thai chicken coconut soup, or your typical salad with an Asian dressing of choice.
