Ingredients
- 1 small head of cauliflower, chopped
- 2 tablespoons olive oil
- 2 teaspoons pine nuts
- Juice of half a lemon
- 2 cloves garlic, minced and smashed
- 2 1/4 cup almond milk
- 1/4 cup plus 1 tablespoon nutritional yeast
- 2 teaspoons each of salt and pepper
- 2 teaspoons each of basil and oregano
Instructions
- For 3-4 minutes, cook the olive oil, pine nuts, and garlic in a medium-sized pot over medium heat or until the garlic becomes golden brown.
- Add the almond milk and bring the pot to a boil.
- Adjust the heat to medium, and add the cauliflower and spices into the pot. Cook for about 8 minutes or until the cauliflower becomes soft.
- Pour the content of the pot into a high-powered blender along with the nutritional yeast and lemon juice. Blend on high until the mixture is smooth.
- Serve with zucchini noodles or gluten-free pasta and a topping of fresh basil.
